  1. Slice pork into thin slices against the grain.

  2. Prepare the pork marinade by combining the salt, baking soda, cornstarch, Chinese cooking wine (or dry sherry), and dark soy sauce into a bowl and mix well. Pour mixture onto the sliced pork and mix until all pieces of pork are coated with the marinade. Let it sit at room temperature for 30 mins.

  3. In the meantime, prepare the vegetables and set aside for stir-frying.   Chop the onion roughly into one-inch pieces. Mince 10 to 12 cloves of garlic.  Cut red bell pepper into one-inch pieces.  Chop the jalapeño into small pieces.

  4. Prepare the sauce by mixing the Korean red pepper flakes (Gochugaro), mirin, fish sauce, soy sauce, white sugar, honey, black pepper and sesame oil.

  5. Heat up a large skillet to medium high with sesame oil. When hot, add the marinated pork into the pan and spread it out into one layer. Wait a couple minutes to allow the pork to caramelize on one side before flipping the meat over.

  6. Add the minced garlic, onions, bell peppers and jalapeños, and give it a good stir.  After a minute, add in the sauce and give it a stir. Let it cook for 2 to 3 minutes.  Add in the toasted sesame seeds (with some reserved for garnish) and give it a toss. Once the sauce has reduced, turn off the heat. It is ready to plate.

  7. Transfer the pork bulgogi onto a serving bowl and garnish with chopped green onions, a drizzle of sesame oil and topped with more toasted sesame seeds.  Serve with white or brown rice.  Enjoy!
