Place chicken wings in a mixing bowl. Add Shaoh Shing wine, soy sauce, white pepper, grated garlic and grated ginger. Toss to combine.
In a plastic bag or ziplock bag, add corn starch and baking powder. Give a little shake to combine. Then add the marinated chicken in the bag and make sure each piece is coated.
In a large pot, using a candy/fryer thermometer, heat about an inch deep of vegetable oil to 350º. Carefully place the chicken wings in the oil one at a time. Stir occasionally to insure that they are not sticking together. Fry for about 8 to 10 minutes or until golden brown.
Meanwhile, to make the sauce, heat up the chicken stock in a wok and add soy sauce and sugar. Make a slurry by combining corn starch and water, and whisk it in the sauce. When the sauce has thickened up and bubbly, turn off the heat. Whisk in sesame oil.
When the wings are done frying, pour them into the wok with the sauce and toss to combine.
Plate the wings and garnish with toasted sesame seeds on top. Enjoy!
